Ideas For A Packed Lunch

Tired of the same old sandwich and packet of crisps? If you need a lunch everyday at work, school or college, you may sometimes wonder what new ideas you can use to make lunch more interesting – without too much effort. If you would like a change from sandwiches, I hope you will find some ideas here that will be helpful.

If you are buying lunch everyday from sandwich shops, or the supermarket, I would urge you to make your own. You will save at least £10 a week and probably a lot more – remember that is £40 per month or £480 a year – enough for a holiday – or several meals out!

If the thought of yest another cheese sandwich leaves you sighing, here are some lunch box ideas to ring the changes

Salads For Lunch

These salad recipes are really easy to make up, can be kept in the fridge for a few days and you can just spoon some into a plastic airtight container in the morning to take to work.

Chickpea Salad
Made in minutes, and gets better each day, you can make it up at the weekend and take it with a slice of bread and some green salad.

Three Bean Salad
Delicious – use all tinned beans if you don’t want to soak overnight and boil the beans. Easy to put together and keep in the fridge for a few days. Serve with your favourite bread.

Pasta Salad
Ready in 15 minutes, use your favourite pasta whether white, wholemeal or spelt.

Awen Mushroom Squares
A great savoury snack or lovely lunch – serve on its own or with one of the above salads

Leftover From Dinner

It is even better if your lunch is a leftover from your supper – cook once for lunch and dinner. Cook twice as much to create enough for lunches all week. There are several recipes that are ideal cold for lunch, so your supper can be extended for lunch too.

Lentil And Cheese Flan
A slice of lentil and cheese bake would go well with one of the salads above and may be a bit of green salad. How much better than a sandwich is that!

Brie And Tomato Tart
This is not only makes a really easy supper it is s great for lunch the next day – you will be the envy of your work colleagues.

All the quiche recipes are delicious cold
Make a couple extra when you are baking one – they freeze well too. Serve with a green salad or one of the salads above

Broccoli And Blue Cheese Quiche
Leek And Goats Cheese Quiche

Make Your Own Bread

Make a Farmhouse loaf wholemeal loaf or Bread with Spelt flour
For a Special sandwich are accompaniment to salad, make your own bread – or try making your own oatcakes!

Or how about that old favourite a Boiled Egg for lunch!

A Lunch Time Treat

When you have had you salad, or quiche, or boiled egg, how about a home made treat. Make a cake or scones at the weekend and pop them in your lunch box. Try something from the selection of Baking Recipes
